To me food is very often connected to childhood memories.Today I would like to share one of my good old favorites from „way back then“. It is very easy to prepare and has been tested by me on various friends in different countries and all liked it very much.So I am hoping it will find more friends here.By sharing this recipe I am honoring my Mom and her ability to create the most delicious dishes with just a few ingredients. Also she would make sure that we use as much as possible the seasonal gifts of our garden as well as items we have on stock. I am continuing in this tradition which also ties in beautifully with the support provided by grobit.

Mom‘s favorite apple pancakes

A sweet delicacy with sour apples!

Ingredients

  • 3 pcs Apples (preferably sour)

  • 2 pcs Eggs

  • 2 tbsp Flour

  • 2 tbsp Yogurt (plain)

  • 2 tbsp Sugar

  • 5 tbsp Vegetable oil (neutral, e.g. sunflower)

  • 1 pinch Salt

Directions

  • Peel the apples and remove the cores
  • Slice the apples in quarters and then in slices. Put them aside
  • Separate the egg yolk and white
  • Add the salt and two spoons of sugar to the egg whites and beat them stiff. Put it aside.
  • Mix the egg yolks with two spoons of plain joghurt and two to three spoons of flour. The consistency of the dough should be similar to chewing gum.
  • Fold in the egg white.
  • Heat four to five spoons of neutral vegetable oil (e.g. sunflower) in a pan at maximum stove heat.
  • Add four times two spoons of dough to the pan.
  • Reduce stove heat to medium.
  • Put the apple slices on top of the four pancakes.
  • Add another two spoons of dough onto each pancake covering up the apple slices.
  • When the bottom of the pancakes has become firm turn them with the help of a spatula.
  • ENJOY THE MEAL!

Notes

  • Depending upon your personal taste add other fruit, apple juice, walnuts or maple syrup when serving.
  • The pancakes are ready to serve when both sides have become firm, the color is golden to brown and the apples have become soft (you can check that with the help of a toothpick).
  • You also may want to try the basic recipe with other fruit such as e.g. (sour) berries, apricots or plums. When doing so I recommend you to add more flour to the dough as with juicy fruit it needs to be firmer to prevent the pancakes from falling apart.
  • Depending upon the course this may serve for either two adults as main dish or four deserts.
