Aloo Paratha – The ideal breakfast to begin your day!

Aloo Paratha – or stuffed potato Paratha! The perfect comfort food and the ideal breakfast to start your day! Thanks to Chetna Desai who shared this lovely recipe with me.

Aloo Paratha is a beloved dish in Indian cuisine, particularly in the northern parts of India. It represents the epitome of comfort food, often relished as a hearty and wholesome breakfast or lunch.

Paratha is a type of flatbread made from whole wheat flour, stuffed with a filling , which can be vegetables OR meat or a combination of both. And the best part about the paratha is that it is both flavorful and satisfying. The use of whole wheat flour makes it a healthier option! In this case we are making the Aloo Paratha , which has the Aloo OR the potato – a rich source of carbohydrates and nutrients.. No wonder this recipe kick starts your day!

Aloo Paratha and my nostalgia

Often in my engineering & early work days, the parathas have been the constant favorite. And India has a number of types of parathas: Cheese, Potato, Onion, Radish, Carrot… the list goes on ! One of my favorite memory around Parathas is sitting with my work colleagues during the early days at Juhu Beach (yes.. The beach) and enjoying the streetside parathas…! Yummmm!

Serving / Pairing

Just enjoy the Aloo Paratha when it is hot! But very often it is paired with a cup of yogurt and a serving of pickle. Or you can also enjoy it with a lovely dollop of butter!

Alternative ingredients

Though potatoes are one of the best vegetables for paratha.. The best part is you can use almost any vegetables with paratha. What’s more you can also use leftover vegetables.. A perfect reuse of the leftovers with a heart-warming flavor! 

Even with the existing Aloo Paratha you can go crazy on the versatility. If you find the traditional spices too intense, you can easily adjust them to your liking. For a milder version, replace the regular chili powder with Kashmiri chili powder or paprika powder, which are less spicy. 

Further you can also experiment with adding finely chopped onions, grated cheese, or even cooked peas to the potato filling for added flavor and texture.

Storing Aloo Paratha

This is mostly enjoyed fresh! Hence it is usually made in small batches. But you can still store it in airtight container and consume it in 2-3 days max.
Important : Before placing the Aloo paratha in the airtight container, place tissue paper or muslin clothes in the bottom. This absorbs moisture from the paratha and prevents the bottom paratha from getting too moist.

Ingredients

  • 5 medium Potatoes

  • 5 stalks Coriander

  • 1 tbsp Turmeric powder

  • 1 tbsp Chilli powder

  • 0.5 tbsp Coriander Powder

  • 3 cups Whole wheat flour

  • 1 tbsp Salt

  • Water as needed

Directions

  • Making the stuffing
  • Boil, peel and mash the potatoes
  • Chop the coriander leave and mix with the mashed potatoes
    Note : If you are NOT a coriander fan, you can skip it
  • Add the chilli powder, turmeric powder, coriander powder & salt
  • Mix all the ingredients thorougly to prepare the stuffing
  • Now separate 10 small portions of the stuffing to make small stuffing balls
  • Making the dough
  • Sift the flour with a filter (channi in Hindi)
  • Add 1 tsp salt to it
  • Now gradually add water into the flour while mixing it to make a sticky dough
    Note : Add only small amounts of water and gradually to make sure the dough is not too sticky or watery.If the dough gets too sticky or water add a little more flour and adjust
  • Add a little oil to the sticky dough
  • Now knead it well until the dough is formed
  • Separate the dough in 10 individual balls as well
  • Making the Paratha
  • Roll one dough ball into flat round shape with rolling pin
    Note : It is not necessary to make perfect round shape. Just tried to evenly spread the dough and make it flat.
  • Place a stuffing ball in the centre of the rolled dough and wrap the stuffing with dough
  • Now roll the “stuffed” dough very carefully ensuring that the stuffing does not come out
  • Once it is rolled flat, transfer to the hot pan
  • Cook evenly on both sides until it starts browning
  • Aloo paratha is ready. Serve hot with yogurt & pickles
