Green beans in coconut curry – A simple and quick recipe we learnt for my daughter. I would love to say it is my invention..but it aint.. It is my take on the Sri Lankan runner bean curry 🙂
In the meantime this has become one of my recurring dishes. .. often when it is my turn to cook this has become one of my favorites. I do experiment a little with it, for e.g. adding other vegetables like baby corn, or carrots(julienne cut) and it works well. Thats the best part of it.

In addition of course, this recipe can be quickly and goes very well with rice… or if you Indian crepes then you can pair it “Neer Dosa” or “Amboli” or “Ghavane”..

Ingredients

  • 0.5 kg green beans (also called french beans)

  • 1 nos small onion

  • 1 tbsp ginger garlic paste

  • 1 can coconut milk

  • 1 tsp mustard seeds

  • 2 tsp turmeric powder

  • 1 tsp paprika powder

  • 3 tsp salt(adjust to taste)

  • 2 tbsp oil

  • 1 tsp asafoetida(optional)

Directions

  • Making the Paste
  • Dice the onion into small cubes
  • Grind it in a mixer along with the ginger garlic paste
  • Making the curry
  • Heat oil in a pan
  • Once it is hot, add all the spices(except salt) and fry them
  • As next step add the onion-ginger-garlic paste to the masalas and mix them thoroughly.
  • Cook for 2-3 minutes till the mixture turns brownish
  • Now add the beans and cook them for 15-20 minutes till beans turns soft
  • Finally add the coconut milk and salt to mixture
  • Lower the heat and simmer for 5 minutes
  • And it is ready. Serve it with rice

Notes

  • For extra tang add a little lemon
  • You can spice it up by adding green chilly in the grinder while preparing the paste
